It is a once a year apple season in Southern Finland. Apples are dropping from the trees. It’s time to make an apple cake.
BON BON-FIRE APPLE CAKE, vegan and gluten free
Base:
- 2 dl sunflower seeds
- 1 dl granulated cane sugar (or brown sugar)
- 0.5 dl water
- 1 dl Fibrex sugar cane fiber
- 3 table spoons of virgin coconut oil
- 5 dates (sweetened)
- pinch of Himalajan salt
- 1 tablespoon of vanilla sugar
- 1 teaspoon of cinnamon
Add all ingredients in a blender. Blend together for about 5 min. After done it should look like this:
Press evenly on the bottom and little bit on the sides of a papered cake mold.
Cake filling:
- 2 dl of cane sugar
- 1 liter of apple slices (Ini did not peel the apples, since they were organic)
- 3 tablespoons of virgin coconut oil
- 2 dl of whole grain rice flower
- 1 teaspoon of baking soda
- 2 teaspoons of baking powder
- 1 tablespoon of vanilla sugar
- 1 dl of Maizena corn starch
- Pinch of salt
- 2 teaspoons of cinnamon
- 1 teaspoon of cloves
Wash the apples and slice into a blender. Add Sugar. Blend to an even and smooth mixture. In separate bowl mix together the dry incredients. Add into the blender. Blend an additional 5 minutes.
Pour the batter into a cake mold. Bake in 175 Celcius for about 40 to 50 minutes.
It should look like this when out of the oven.
Let the cake cool for a while before removing from the mold.
Notice that after about 10 minutes the cake will settle in a bit, and form a nice area for the topping.
You can serve the cake warm or cold with for instance vegan coconut cream or vegan ice cream. If you are not vegan you can serve it with vanilla cream or vanilla ice cream.
